Today is a Starch Solution Q & A, Instant Pot Spanish rice recipe and a weight loss Update video. *Disclaimer* The answers to the questions are based on my personal experience and is not meant to be medical advice. Please seek the advice of a medical professional if needed.
Here is the recipe for the Instant pot Spanish rice.
1 cup rice white or brown, I used white
2 cloves minced garlic
1 T each, chopped green pepper, orange pepper, onions, frozen peas, frozen roasted corn, carrots.
3 T tomato paste
2 cups veggie broth
1/2 - 1 tsp each oregano, cumin, garlic powder, onion powder
water for saute
Instructions:
set Instant pot on saute.
add some water to the instant pot and add rice saute for a couple of minutes adding water as needed. Add garlic and saute for one minute, add the veggies and saute for 3 minutes adding water if needed. turn off saute mode then add 3 T of tomato paste and spices and mix well into rice.
Add veggie broth and stir well. Turn saute mode back on and bring it up to a simmer. When you start to see a few bubbles then turn saute off and put lid on make sure it is on sealing and set to manual for 10 minutes and then let the steam release naturally for 10 minutes and then you can release the rest of the Remove lid and fluff with fork add salt and pepper if desired. Enjoy!
